Short description
Cowboy Butter Spaghetti is an approachable, flavor-forward pasta dish that combines warm browned butter, garlic, crushed red pepper, fresh herbs, and a touch of acidity. The result is a silky sauce that clings to spaghetti, creating a comforting, slightly spicy bowl ready in around 20–30 minutes.
Why it works:
- Browned butter adds nutty depth.
- Garlic and chili bring heat and aroma.
- Fresh herbs and lemon brighten the richness.
This recipe is intentionally pantry-friendly so you can prepare it on short notice without specialty ingredients.
Ingredients
- 12 ounces (about 340 g) spaghetti or long pasta of choice
- 6 tablespoons unsalted butter
- 4 large garlic cloves, finely minced
- 1 to 1½ teaspoons crushed red pepper flakes (adjust to taste)
- 1 teaspoon smoked paprika or regular paprika
- 2 tablespoons chopped fresh flat-leaf parsley
- 1 tablespoon chopped fresh chives or green onions (optional)
- 1 tablespoon capers, drained and chopped (optional for briny lift)
- 1 teaspoon Dijon mustard (optional for tang and emulsification)
- Zest and juice of 1 lemon (zest finely grated)
- Salt and freshly ground black pepper, to taste
- ¼ cup reserved pasta cooking water
- Freshly grated Parmesan or Pecorino Romano, for serving (optional)
Notes on ingredients:
- Butter: Unsalted lets you control seasoning. For a richer finish, use half butter and half extra-virgin olive oil.
- Heat: Adjust crushed red pepper to your tolerance; toasted chili oil can be used if you prefer.
- Herbs: Parsley is classic; cilantro or oregano will shift the profile but still work.
Method
- Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook until al dente according to package directions. Reserve ¼ cup of the pasta cooking water before draining.
- While the pasta cooks, melt butter in a large skillet over medium heat. Let it bubble and then reduce heat slightly so the butter browns slowly. Swirl the pan and watch for milk solids to turn golden-brown and smell nutty — about 3–4 minutes. Do not burn.
- Reduce heat to low and add the minced garlic to the browned butter. Stir immediately and cook gently for 30–45 seconds until fragrant. Add crushed red pepper flakes and paprika, stirring to combine.
- If using Dijon mustard and capers, stir them into the butter mixture now to dissolve and distribute flavor.
- Add the drained spaghetti to the skillet. Toss vigorously to coat the pasta in the cowboy butter. Add the reserved pasta water a splash at a time (start with 2 tablespoons) to help emulsify the butter into a silky sauce that clings to the noodles.
- Add lemon zest and juice, chopped parsley, and chives. Toss for another 30 seconds so the flavors marry. Season with salt and generous freshly ground black pepper; taste and adjust.
- Finish with a shower of freshly grated Parmesan or Pecorino if using. Serve immediately with extra herbs and an additional squeeze of lemon if desired.
Tips
- Brown the butter carefully: medium-low heat and patience produce a deep, nutty flavor without burning.
- Reserve enough pasta water: the starchy water is essential to bind the sauce and create a glossy finish.
- Balance richness with acid: lemon juice and zest cut through the buttery richness and brighten the dish.
- Make it heartier: add grilled shrimp, shredded rotisserie chicken, or sautéed mushrooms to turn this into a main-course meal.
- Make it ahead: prepare the cowboy butter ahead and gently reheat with a splash of pasta water before tossing with freshly cooked spaghetti.
- Storage: keep sauce and pasta separate when storing leftovers. Reheat gently in a skillet with a splash of water to loosen.
- Adjust heat: for smoky heat, substitute smoked paprika or add a pinch of chipotle powder.
